Mince the garlic and chop the onion. Sauteé in a little bit of olive oil. After the onions start to brown, add pieces of broccoli (sized as desired). Put a lid on the pan for broccoli to steam. Chop and add mushrooms. While this is cooking, drain seitan pieces and cover them in flour on a plate. Add the seitan to a separate pan with olive oil and sauteé the pieces on medium heat until crispy. Add the seitan to the vegetables and mix in szechuan sauce.
